Soft, buttery cereal bars made with melted marshmallows, vanilla, and a little salt.
Yield: 20 treats • Prep: 10 min • Cook: 5 min • Total: 1 hr 15 min
Ingredients
- 3/4 cup (170 g; 12 Tbsp) unsalted butter
- 2 (10-ounce) bags (566 g; 11 heaping cups) mini marshmallows
- 1/2 teaspoon pure vanilla extract
- Pinch of salt
- 9 cups (270 g) crispy rice cereal
Instructions
- Line a 9 x 13-inch pan with parchment paper and lightly grease it.
- Melt the butter in a large pot over medium heat. Add the marshmallows and stir until melted.
- Remove the pot from the heat. Stir in the vanilla and salt, then fold in the cereal until coated.
- Transfer the mixture to the pan. Spread it gently to the edges, then lightly press it into place without packing it down.
- Leave the pan at room temperature for at least 1 hour and up to 1 day. Cover it if it will sit out for more than a few hours.
- Lift the set mixture out with the parchment and cut it into squares.
- Store leftovers in an airtight container at room temperature for up to 3 days, with parchment or wax paper between layers.
